Recipes from the diary of Julia Bullock-Webster, BC Archives call number MS-1965, vol. 4

Julia Bullock-Webster (1826-1901) was an elderly English gentlewoman when she visited her two sons, Edward Walter and William Howard Bullock-Webster, at their ranch near Keremeos between 1894 and 1896. These recipes were selected from the fourth and last volume of her diaries:

Tapioca cream.
A very good invalid soup.
1 Pint white stock
1 oz. crushed tapioca
1 gill of milk or cream
The yolks of two eggs
Put the stock on to boil. When boiling sprinkle in the tapioca & cook till clear, stand it aside for a minute then pour over the eggs & milk, previously well whisked together. Then back to the saucepan just to thicken & take off the rawness. On no account let it boil or the eggs will curdle.

French Pancakes
2 oz butter slightly warmed
2 oz pounded sugar
2 oz flour. Well mix & then add
2 yolks of eggs & 3 tablespoonsful of milk, butter 4 or 6 plates & put equal quantities on each.
Bake in a moderate oven 20 minutes.
Put a layer of jam between each and serve.

Jumbles
½lb flour, ¼lb butter, ¼lb sugar, 1 egg.
Mix the flour & butter.
Add half the sugar.
Whisk the egg & mix together, flavour with ratafia or lemon.
Take a piece of the paste the size of a walnut & roll in the remainder of the sugar till about 7 inches long.
Roll around into shape & bake in a quick oven on a tin.

Onion Soup (Maigre)
Slice a couple of Spanish onions, roll them in flour & let them take a turn or two in a saucepan with plenty of butter.
Before they begin to take color, add as much water as you want soup with pepper & salt to taste.
Let the whole boil till the onions are thoroughly done, then pour the soup into a tureen over some small slices of stale bread.
Add a good sprinkling of Parmesan cheese & serve.
